I was reading on Wikipedia that the track is all-new but follows the exact same layout as it used to. So while it is "new track" the ride experience has not changed in that respect. A lot of the changes were cosmetic. They added little wall unit video games on the queue (not unlike Soarin'), some new light effects (primarily to make the ride darker and the stars brighter) and things of that nature. Disney may have gotten the memo that while it's one thing to screw with The Living Seas, messing with Space Mountain is dangerous.
Oh yeah, they also added ride cameras during the strobe light effect. Haha.
Regarding the music, I think the queue music is the same but apparently the exit music is different. Most of the sound effects were updated and/or replaced as well.
EDIT: Writing this makes me wish that they would turn Big Thunder Mountain Railroad into something a little more thrilling ala Space Mountain. I LOVE the BTMRR theme and design but the ride is tame. Then again, with my son having just turned a 13 months old, maybe they should keep BTMRR exactly the same so he and I can ride it together!
